I am a big fan of Aglio e Olio pasta. It originates from the Italian city of naples. It's made of olive oil and parsely (I use corriander) which is also what 'Aglio e olio' means, making these two the principle ingredients in the recipe. The recipe involves other ingredients like garlic, lemon zest cheese and herbs, this basically is the base but we can add other ingredients and seasonings based upon our likings and what we think would go well with the dish. I add cut-up sausages, dry chilli, a lot of oregano and extra garlic ( Wow I am already salivating). It is such a simple dish but so delicious!
I first tried it during the lockdown period, it must be between 2020 to 2021. So the first impression I got of the dish was from my own cooking and it came out so well. Then, I tried it at different places outside but they did not measure up to my pasta. I can understand if it sounds a little self-aggrandizing but I've heard it from my family too, they like my way of making it better the restaurant's. However, there was one particular place that impressed me so much; It is called 'Lyfe by Soul Garden Bistro', a vegetarian place. It has two branches, the one that go to is in alwarpet. I thoroughly enjoy not only their Aglio e Olio spaghetti pasta but many other food on their menu. The bistro makes their ice creams from scratch and provides healthier options to their food. There is also vegan food. If you happen to visit, please give their barbeque paneer a try too, oh my God! it beats non-veg for me (I used to have this monstrous affinity towards non-vegetarian but not anymore, it's not a sad story either). I know I started to talk about aglio e olio but I had to include my review about this place too. The price can may not be budget-friendly but I guess it should be fine once in a while as it makes for a great dining experience, the food quality is top-notch.
So.. Aglio e olio, try it for yourself if you are new to the dish and I have attached below, the link to the recipe video that I reffered to when I first made it, you can follow that if you want, it happens to be an authentic recipe or you can find your own.
